Differentiate a ‘Detroit’ from a ‘Sicilian’

What you'll learn

Using the indirect method, you will learn to make your own pre-ferment and pizza dough suitable for both hand stretched pizzas and pan pizzas.

Learn to make a classic American-style tomato sauce with a subtle hint of garlic, and know how to apply it to different types of pizzas for maximum impact.

Understand how par-baking can both accelerate production and improve your final product.

Get to grips with the fundamental ingredients and know when to add them to your pizza, either before baking, or during the finishing and presentation.

Learn to hand stretch a classic round New York style pizza with a distinct crust and a thin middle.

Discover the Detroit, a classic pizza from the ‘motor city’, using a high sided pan to create a caramelized cheese crust.

Make a Sicilian with a twist, using thick hand cut pepperoni and a touch of honey.

Achieve a thin and crispy base and emphasize fresh tomato flavor in ode to a classic ‘Grandma’ pizza, just like Grandma used to make at home.

Loved the pizza course instructed by Laura Meyer!

She does an excellent job breaking down processes and ingredients. I no longer feel intimated making pizza after watching this course. I enjoy fluffy dough so I'm excited to make the Sicilian and Detroit style pizzas.

WAY too many chapters

We were promised to learn about flour, but there was nothing. Also, I don't need 4-5 chapters for each pizza. We learned more about a specific pizza, not a style, or what makes it that style.
