  • I made the brioche dough as taught in the video course, including the Key lime Cheesecake filling for the inside of the roll. I was inspired from the cinnamon roll David Cowcill‘s course. I made a keylime cream cheese icing. This is exquisite!

  • Esta es una tarta mousse de mascarpone y caramelo con base de galleta lotus. Tiene encima una cobertura realizada con ganache de chocolate 54%. Para la decoración atemperé chocolate y sobre alcohol congelado hice hilos de cholate que posteriormente pinté con polvo dorado.
