Learn buttercream piping techniques for special occasion cakes in large and small formats. In this online course, Lisa Cheng, owner of Ecassion Cake Design (winner Scottish Wedding Awards 2023) will share her buttercream piping tips and tricks.

Lisa will demonstrate three large format cake designs, including a two-tier stacked wedding cake decorated with roses, and a vintage- style (Lambeth) birthday cake. She will also share techniques for the decoration of small format products, such as cupcakes and cake pops.

What you'll learn

You will learn how to trim, cut and layer sponge cakes to build an even and stable structure. Next you will crumb coat (undercoat) your cakes before finishing them with a perfect exterior layer of buttercream. Finally you will learn a range of buttercream piping techniques useful for decorating a variety of special occasion cakes.

Classy Rosette cake design: Learn to create an attractive design using just one single color for your cake coating and piped decoration.

Vintage-style birthday cake: Create an elaborate vintage design, also known as a Lambeth-style cake, adorned with roses, leaves, frills and swirls, making use of four colors.

Wedding-style cake design: Learn to pipe large decorative roses in a range of colors and shapes. Learn the correct way to fix the flowers to a two-tier stacked cake for display at an event or special occasion.

Cupcakes: Work with three graduated tones of the same color, and a range of different nozzles, to create a series of complementary themed cupcake designs, suitable for display as part of a centerpiece table, or dessert table.

Cake pops: In this bonus lesson, learn to work with compound chocolate to apply a clean, smooth and even coating to your cake pops. Create three complementary designs that can be quickly executed to provide an interesting addition to your special occasion dessert display.

Good basics

I am an intermediate cake maker. . This course is good for the very basic skills. It would have been useful to add some things that can mess you up. I don’t know a first time cake maker that stacked a level and smooth buttercream cake. Or when Swiss Meringue curdles? And other first time stuff
