    Potatoes with Aliñás sauce

It is an Andalusian recipe, essential especially in summer. One of those fresh and delicious, although some people also serve it warm (personally I like it cold).

This is how it is made:

Cooked with the skin and peeled while still hot, cut into medium pieces, a good splash of sherry vinegar, extra virgin olive oil,…

  • hello ,

I’m currently taking a gelato course on this site, and the instrctor introduced three stabilizers for ice cream: citrus fiber, locust bean gum, and guar gum.
My question is: what exactly is citrus fiber? It’s not clearly known in my country. Is this ingredient the same as pectin, or is it just powdered orange peel, or something else?

Not long ago I shared with you the process of pickled quail. Today I show you the salad I prepare with the meat of these quails, romaine lettuce, lamb’s lettuce, lamb’s lettuce, avocado and a vinaigrette that I prepare by emulsifying part of the pickled juice with olive oil. It is a delicious salad, very complete and full of flavor

With the vegan pistachio and banana ice cream, my husband and I made a beer float yesterday.

It is about drinking beer with ice cream. The beer we used is a mild Stout of 5.2% alcohol from a brewery here in Malaga.

With the mayonnaise with egg, sometimes it was cut, until I understood that all the ingredients had to be at room temperature.

As for other types of failures, I have made breads that…

Today I attempted the first recipe in the fundamentals of Artisan Ice Cream course. Although the course was a little more technical than I expected, I learned quite a bit more than I anticipated, so here is my version of the vanilla ice cream.

    Lamb Tournedo with violet potatoes

The potatoes are mandolin cut and fried at 180*

The tournedo is made with shredded lamb neck made into a roll.

It is cooked at low temperature in the oven and then browned, the sauce with a reduction of juices and Pedro Ximenez, some rosemary needles as well
