Arroz con Pato (Peruvian Duck with Rice) with Salsa Criolla
This incredibly flavored rice is one of the most famous dishes in Chiclayo, north of Lima. The rice is cooked with beer and chicken or duck stock along with aji amarillo for a little spice. It is super delicious and I added some extra refinement to it by giving it a French twist.

Hoy hemos cogido los primeros tomates grandes de mi huerto y he preparado unos tomates con pepino tambien del huerto y para degustar bien el sabor he decido aliñarlo solo con un poco de sal y un aceite de crianza organico

After completing the Zero Waste batch cooking course I decided I would go all out and commit myself to the challenge and have a day of batch cooking. Tonight, our first meal i cooked from everything that was prepared today was the Fish stew. I added some prawns to the dish.
