    I’m currently taking a gelato course on this site, and the instrctor introduced three stabilizers for ice cream: citrus fiber, locust bean gum, and guar gum.
    My question is: what exactly is citrus fiber? It’s not clearly known in my country. Is this ingredient the same as pectin, or is it just powdered orange peel, or something else?

    Hace poco os compartía el proceso de unas codornices en escabeche. Os muestro hoy la ensalada que preparo con la carne de esas codornices, lechuga romana, canónigos, aguacate y una vinagreta que peparo emulsionando parte del jugo del escabeche con aove.     Con los helados veganos de pistacho y de plátano,hicimos mi marido y yo ayer un beer float .

    Se trata de tomar cerveza acompañada de helado. La cerveza que utilizamos es un Stout suave de 5,2% de alcohol de una cervecera de aquí de Málaga.

    #epicfail hoy he probado a hacer una lactonesa. Es la primera vez que la hago y se me ha cortado. He intentado arreglarla pero no lo conseguí. ¿ algún truco para hacerla bien?

    Today I attempted the first recipe in the fundamentals of Artisan Ice Cream course. Although the course was a little more technical than I expected, I learned quite a bit more than I anticipated, so here is my version of the vanilla ice cream.
