      Jiao Zi with Iberian secret

The journey around stuffed dumplings continues. The stop: China… specifically northern China with these Jiao Zi stuffed with pork and vegetables. Boiled in water and, half of them, grilled.

Jiao Zi (precursors of Japanese gyozas) are a simple meal, but full of meaning: their sealed edges enclose a juicy filling and a great truth: that sharing nourishes as much or more than the pork secret itself with which they are made. Each fold, each puff of steam, each aroma, each flavor note… the ginger, the sesame oil… are a whole universe.

In this case, the real ceremony is in the preparation. Kneading, forming and stretching small balls, the folds. And love.

Type of dough: simple and elastic, without yeast and without fermentation, it is made only with wheat flour, water, a little olive oil and salt. It is kneaded, divided into small portions that are stretched into discs (photo 7)

Filling: There are many versions, always salty and usually with meat. In his Dim Sum course, Meilan Kao prepares them with beef. I have chosen to make them with pork, specifically with Iberian secret to make them more special. I minced the meat myself (photo 5). The rest of the ingredients: zucchini, spring onion, ginger, salt, pepper, Chinese salt and sesame oil. The secret: give it juiciness without excess moisture, or the dough will break when you close them (Photo 6)

Closing: The jiao zi are closed by hand in a half-moon shape, with four folds.

Type of cooking: Cooking in boiling water for four minutes. Half of the jiao zi, three cooking I have passed them through the griddle, as explained by Meilan Kao in her course.
