A very fresh gelée cheesecake, with Payoyo cheese from Andalusia.

Air Cheesecake is a mousse-style cheesecake, also with very little sweetness. This recipe is very special because it won the world pastry championship.

Farmhouse cheesecake, super easy to make and quite resistant. Holds up well in the display cabinet, fridge and freezer. It is ideal for banquets, for delivery, or for heavier decorations.

Cheesecake Wonders

Chef Dina Alsina presented this course wonderfully. There are so many cheesecake ideas and the ones that were presented in this course seem easy the no-bake cheesecakes are great for the summertime. I will try each one because I love different desserts to present in my business as an upcoming chef.

Great course just some information left out

I loved this course but I wish some information like how long to mix and what to use/make when you don't have the specific preparation product. There was this product one of the cheesecakes needed called Ken but I couldn't find it anywhere. But I made the Japanese cheesecake and my family and friends loved it! It came out so custardy and pretty.
