      Moroccan lemon chicken

Do you remember the Moroccan-style pickled lemons I made? Well, today I have finally used them in a recipe that my mother-in-law taught me. An old recipe, she used to make it like no one else. But now with pickled lemons.

The chicken without skin, previously marinated with garlic, parsley and salt. In a casserole put it with a little aove, mushroom, a saffron strands, some pieces of pickled lemon (in the original recipe lemon juice and pieces of the skin that after a while is removed) a chicken stock cube and white wine until almost covered, let it cook until the chicken is done and is a well bound sauce.

The mushroom I usually put it fresh but I didn’t have it and I have put it canned, it is equally delicious.

maloles, that lemon chicken with a Moroccan touch looks so good! Thanks for sharing not only the recipe but also that family history that makes it even more special. I like how you gave it your touch using the pickled lemons.
did you notice any change in the flavor of the dish from the traditional version with lemon juice.

As for suggestions on where you can use your pickled lemons, it occurs to me that you can use them in a Mediterranean salad, in fish, seafood, dressings or some couscous or spicy rice.

Here are some courses and recipes that may interest you:

Delicious and comforting. The combination of flavors is super interesting: the saffron strands, the pickled lemons, the touch of white wine… and that chili thread finish gives it a character all its own! 🌶️🍋
The plating is warm and rustic, it conveys home and tradition. I love how you tell the origin of the recipe, those stories feed the soul too! 👏
what was the main lesson you learned from using pickled lemons for the first time? Surely now it opens up new possibilities to explore flavors with that versatile ingredient. I’d love to see it in a dessert topping an ice cream or granita.

@soldamiani Gracias Sol !

My weakness, Maloles ❤️. Your lemons are perfect and you knew how to make the most of them with that delicious chicken 😋😋😋😋.

You can add a little of that lemon to almost any stew…just a pinch, it gives a very special touch of flavor to lentils, for example. Not the pulp, but the zest, finely chopped, can be added to salads, also to pasta.

My star dish with these lemons is also chicken, the classic chicken tajine with lemon and olives… let’s see if I make it soon

By the way, my lemons are still locked up there.

Using your homemade pickled lemons must have added such a unique depth to the dish. Your mother-in-law would surely be proud of how beautifully you honored her recipe! And honestly, even with canned mushrooms, I can imagine it was still full of soul and comfort. 💞

@lanamihajlovic Thank you Lana. My mother-in-law made this chicken like no one else, she was a great cook and left me some of her recipes that I keep with care and make from time to time. This time I wanted to version it a little 😉.
