Ya casi he terminado el curso «Classic Cakes» de Hans Ovando y Elena Adell, y como parte de mis prácticas, he decidido retomar uno de los rollitos del curso y darle mi propio toque.
Para esta versión, he trabajado con un bizcocho de chocolate, un relleno de frutos secos y ganache de chocolate. He mantenido la idea principal del curso, pero he ajustado la composición y el acabado para reflejar mejor la línea que estoy desarrollando para Maison Efsun.
Para el acabado, utilicé migas de bizcocho de chocolate, frutos secos picados y una ligera capa de cacao en polvo. Quería que la presentación fuera sencilla y se centrara en la textura y la combinación de chocolate y frutos secos, en lugar de añadir decoraciones innecesarias.
Una de las cosas que más me gustan de la formación en pastelería es aprender una técnica y luego intentar comprender cómo puedo adaptarla, mejorarla y, finalmente, integrarla en mi propio estilo.
Agradecería mucho vuestros comentarios, especialmente los de pasteleros y compañeros de estudios. ¿Qué cambiaríais en la textura, el equilibrio, el acabado o la presentación?

Maison Efsun Pâtisserie
I’m almost finished with the Classic Cakes course by Hans Ovando & Elena Adell, and as part of my practice, I decided to revisit one of the roulades from the course and give it my own interpretation.
For this version, I worked with a chocolate sponge, nut filling and chocolate ganache. I kept the main idea from the course, but adjusted the composition and finishing to better reflect the direction I’m developing for Maison Efsun.
For the finish, I used chocolate sponge crumbs, crushed nuts and a light dusting of cocoa. I wanted to keep the presentation simple and focused on the texture and the combination of chocolate and nuts rather than adding unnecessary decoration.
One of the things I enjoy most about pastry education is learning a technique and then trying to understand how I can adapt it, improve it and eventually make it part of my own style.
I’d really appreciate your feedback, especially from pastry chefs and fellow students. What would you change in the texture, balance, finishing or presentation?
