What a beautiful sight to come across this symphony of reds!!!! It immediately catches the eye and makes the dish feel warm before you even taste it. The roasted peppers have that soft, slightly caramelized look that speaks of slow oven cooking…. while the golden potatoes bring contrast and reinforce that comforting, rustic character. I especially like how the colors themselves tell part of the story here.
