Siento que estoy volviendo a una de las cosas que más me gustan… crear en la cocina. Últimamente no me sentía muy creativa, pero esta mañana, mientras cosechaba en el huerto, rodeada del verano, de repente sentí una oleada de inspiración. Y luego mi utensilio de cocina favorito —mi espiralizador de verduras— se encargó del resto.🌀 Con esta ola de calor, quería preparar algo ligero, colorido y refrescante para comer. Pepino fresco del huerto, cebolla, pimiento dulce… y frambuesas. 🤩 Los convertí en una ensalada llena de color y la serví acompañada de queso a la plancha y gruesas lonchas de solomillo de búfalo curado. Resultó increíblemente refrescante.
Las frambuesas aportaron una sorprendente profundidad de sabor y un precioso equilibrio entre lo dulce y lo ácido que dio vida a toda la ensalada.
No tengáis miedo de combinar fruta con verduras o incluso con carne. A veces, las combinaciones más inesperadas dan lugar a los platos más memorables. Ah, y casi se me olvida… Aliñé la ensalada con una vinagreta sencilla hecha con ajo fermentado, hojas frescas de albahaca, aceite de oliva, sal y pimienta negra recién molida.
A veces solo hace falta un poco de inspiración… y un espiralizador. ❤️

It feels like I’m finding my way back to one of the things I love most… creating in the kitchen.
Lately, I haven’t felt very creative, but this morning, harvesting in the garden, surrounded by summer, I suddenly felt a wave of inspiration. And then my favourite kitchen tool – my vegetable spiralizer – did the rest.🌀
With this heat wave, I wanted to make something light, colourful and refreshing for lunch.
Fresh cucumber from the garden, onion, sweet pepper… and raspberries. 🤩
I turned them into a vibrant salad and served it alongside grilled cheese and thick slices of aged buffalo tenderloin.
It was incredibly refreshing.The raspberries added a surprising depth of flavour and a beautiful sweet-tart balance that brought the whole salad to life.
Don’t be afraid to combine fruit with vegetables or even meat. Sometimes the most unexpected pairings create the most memorable dishes.
Oh, and I almost forgot… I dressed the salad with a simple vinaigrette made from fermented garlic, fresh basil leaves, olive oil, salt and freshly ground black pepper.Sometimes all it takes is a little inspiration… and a spiralizer. ❤️
