Techniques to create your own tasting menu

Paolo Casagrande shows us the essence of his cuisine, its techniques and blends, so that you can create your own dishes and menus. All his creations are made with different elements and products by means of unique processes that enable the preparation of original recipes that the Italian chef uses in his day-to-day life.

The tasting menu that we present has 4 snacks and 6 dishes, combining different textures such as air, gel, fake pil pil and crisp. You will also be able to discover new flavours with top-of-the-range products such as sea anemones, lobster, Carabinero prawns, King fish, oysters or loin of venison.

Half of the steps missing, no explanation on how to create a tasting menu

You have to guess how to do the rest or check the recipe and hope you get it right. No explanation given on how to create a tasting menu, what are the things to consider, and how to bring a menu together. Very disappointed.

Tasting Menu with Lasarte

Very bad translation, missing products, products are added by the Chef in between and not named. All in all not worth the money. I am very disappointed even though Mr Casagrande is a great cook.

No Explanation

The recipes are amazing. But the classes don't explain why these methods and techniques are applied. I didn't even find them in the Recipe Book. By the way, the subtitles have a lot of errors.
