We will begin by teaching the star appetizer of Manu restaurant: Manu’s pork and butter spread. Revealing the secret recipe for transforming lard into a highly aromatic product, as well as creating a fermented butter from scratch.

You will learn to work with seafood products, widely consumed in various regions of Brazil, learn the technique of curing fish and the ability to work with squid ink in the preparation of vinaigrettes and sauces.
Brazil nuts, endemic to the Amazon, will be used in the form of milk and foam. Another outstanding nut, the cashew nut, will be the base for the creation of milk, oil and granola.

The truly surprising desserts incorporate unexpected combinations, such as the union of chocolate and olive, as well as a unique creation that fuses seaweed and mushrooms, reflecting Manu Buffara’s extraordinary imagination.
