What you'll learn
Niederkofler shares traditional mountain culinary methods, promoting sustainability. Through dishes like herb salad with goat cheese and apples and an adapted mountain ceviche, they explore the mountain’s influence on flavors. Dishes like spaghetti with sardines and egg tagliolini with porcini mushrooms highlight the importance of harvesting and using mountain ingredients. Meat soup and potato and pumpkin terrine demonstrate the variability of meat and special cooking techniques. The recipe for beef neck and alpine trout with wheat show creative ways of using ingredients. The course culminates with a traditional dessert enhanced with special infusions and flavors while maintaining the authenticity of the simple dishes.
