    I made cookies this weekend and had a question: do you notice a big difference between baking the dough right away or letting it rest in the fridge for several hours?

    Butter gets firm again
    When we mix, butter gets soft and warm.
    If you bake right away, cookies spread too much and become thin and greasy.
    Chilling = less spread, thicker cookies

    I agree about the butter, but I also find that resting the dough improves more than just the spread. Giving it a few hours in the fridge allows the flour to hydrate properly and the flavors to develop. I usually prefer an overnight rest when possible, especially for thicker cookies.
