His philosophy of hard work and determination has taken him to Michelin-starred restaurants, world-class schools, and the winner’s podium of international pastry competitions.
The son of two pastry chefs, Nicoll spent much of his childhood in pastry kitchens and began his formal pastry education at 15 years old.
Chef Nicoll has previous experience in Michelin-starred restaurants, pastry shops, and confectionery boutiques in both the USA and Europe. In 2015, he became the youngest person ever to win the title of US Pastry Chef of the Year. He also served as the Captain for Team Switzerland in the 2021 Coupe de Monde, which included taking first place in the European Pastry Cup in 2020.
In fall of 2022, Chef Nicoll was named the Head Chef of New York City’s Chocolate Academy. In 2026 he became Head Chef, Chocolate Academy North America.
