Davide Posillipo was born in Maddaloni (Caserta) in 1990 and is the son of highly experienced restaurateurs. He studied at the E. Zegna hospitality school in Cavaglià, in the province of Biella, and began working in the kitchens of hotels and restaurants all across Italy in 2006.
He was a lab assistant for two years at the Dolce e Salato cooking school in Maddaloni, where he was mainly involved in pastry courses, working alongside Italian and international master pastry chefs. There, he refined his techniques in baking, chocolate work, and sweet and savory pastry.
Since 2013, he has run Osteria della Mal’ora in Tronzano Vercellese, where he developed and deepened a new passion: the world of rice. Since 2019, he has been a member of the board of the Strada del Riso Vercellese Association, representing the restaurant sector.
He teaches cooking and pastry courses for Ascom Vercelli and training programs for Formater.
