      I get excited about Indian food… this is a prawn curry, it’s called malai chingri, or by that name I learned it there. It is slightly spicy, but not too spicy, sauve and aromatic. Unlike northern curries, which are made with yogurt, this one uses coconut milk. It is a real treat.

      Anjalina Chugani, in her course ‘Introduction to Indian Cooking’ prepares a very, very similar curry, with white fish instead of prawns. Her curry is from Goa, in the southwest.

        The color of the sauce is beautiful, with that creamy and uniform texture that invites you to try it immediately. The combination with wild rice gives it a very well thought out visual and nutritional plus. I loved that you also presented the pot: seeing that generosity of curry topped with fresh cilantro transports us straight to the table.
        have you tried using fresh mustard seeds or curry leaves to elevate the aroma even more? These are typical South Indian details that could enrich your next version ✨.
        keep cooking with that passion! I’d love to know: what was the first Indian recipe you prepared and what made you fall in love with that cuisine.

          @undefined thanks Sussan… curry leaves I have dried, but not fresh. I should look for seedlings or seeds to grow them at home, because where I live it’s impossible to find them.

          The mustard seeds, I will try next time 😊.

          I fell in love with Indian cuisine on my first trip there, then I went back several times, I’m hooked!

          I suffered a bit because I couldn’t tolerate the spiciness (and now I love it), but the flavors made me fall in love.

          And the first recipe I made was the tandoori chicken… it will never be the same as the one they prepare in the tandoor ovens, but every time I make it it transports me there 🥰🇮🇳

            @beatriztorijagmail-com ¡Qué lindo leerte, Bea!
            Se nota que tu conexión con la cocina india viene del corazón y de vivencias muy especiales. Qué privilegio haber podido viajar varias veces y sumergirte en esos sabores directamente en su lugar de origen… ¡no hay mejor forma de enamorarse de una cultura!

            Qué bonito que el pollo tandoori haya sido tu puerta de entrada. Aunque no tengamos un tandoor en casa, el simple hecho de prepararlo con cariño y dejar que ese aroma inunde la cocina ya es un viaje en sí mismo
            Sobre las hojas de curry, ¡sería genial que puedas cultivarlas! Tener esa planta en casa es como tener un pedacito de la India contigo. Y seguro que con las semillas de mostaza, tu próximo curry va a tener un toque aún más profundo y especial. 🙌🏻
            Gracias por compartirnos tu historia y tu pasión. ¡Me inspira un montón leerte!❤️

          @undefined is delicious. I usually make a lot of sauce, and what’s left over I eat alone with rice 😋.
