      Black Cherry Ice Cream

      #IceCreamChallenge

      Amateur profile

This is an ice cream that already stays in my house forever. From Sergio Dondoli’s Italian Artisan Ice Cream course. It is a variant of Fiordilatte in which once buttered, layers of black cherry compote are integrated, which I have left in large chunks so that each spoonful is special. You can find the compote in a previous post with the recipe I always make.

The most challenging thing has been controlling the temperature. To go downfrom 85º C to 4ªC without having a blast chiller. For this I did with a reverse bain marie.

Ingredients: Whole cow’s milk, skim milk powder, cream, sucrose, dextrose, salt, thickener (carob flour, guar seed flour, citrus fiber), cherries, water, sugar, lemon juice.

Techniques: Emulsifying and balancing sugars, Lowering the temperature, Buttering, Pitting cherries, Cooking

Your black cherry ice cream looks irresistible 😍 The color contrast between the compote and the Fiordilatte base is beautiful, and the detail of the big pieces gives it a very appetizing homemade touch. I really like the way you took care of the presentation: the sundae glass, the decoration and the different angles of the photos help to convey the enthusiasm you put into it.
What you did with the reverse bain-marie, without the blender, is super ingenious. Did you know that you can also enhance the cooling if you cool the metal bowl where you make the bain-marie beforehand? It could help you gain a few key degrees and shorten times.

A technical question that can help you continue to refine: did you test the texture of the ice cream the day after freezing it? How did the creaminess behave without the use of glucose or more complex stabilizers?

congratulations on this first step, Maloles! You are now officially part of the challenge and part of the team of brave people who dare with artisanal ice cream making. On to the next flavor! 🍨✨

@undefined Michas thank you Sussan for the tip to cool the bowl for the reverse bath. I will do it in the next ice cream I prepare which will be very soon.
Of course I tried it the day after freezing it and I will tell you that the creaminess is great. Once it is tempered a little bit outside the texture is extraordinary and the flavor is excellent. I have ice cream of a good brand that I have always bought (I am ice cream all year round) and I will tell you that it has nothing to do with this one. It is well worth the time it takes to have a handmade ice cream as God intended. I will never buy ice cream again, from now on, I will make it myself 🥰❤️❤️

what a joy to read you, Maloles!
I’m so excited to know that the texture and flavor of the ice cream held up so well the next day. That says a lot about the care and pampering you put into the recipe… and what a great satisfaction to have it outperform even a brand you loved! 🙌

What you say is so true: when you taste what you can achieve with your own hands, with real ingredients and no shortcuts, there is no turning back. You can tell you’ve connected with the magic of artisanal ice cream making, and that’s exactly what makes this challenge so special.
I’d love to see your next flavor, now with that little trick with the cold bowl to help you with the cooling. you’re all in!
Thanks for sharing your experience so enthusiastically and for joining the challenge. ❤️

              hey Lo! 🍒

Your submission for the #IceCreamChallenge is loaded with passion, technique and your own style. The visual swirl of the ice cream in the bowl is a spectacle: it seduces at first glance, invites you to imagine the creaminess and hints at your artistic intent. The presentation in the cup has that retro ice cream parlor charm with a playful touch that makes it memorable. And how well resolved the thermal control without a chiller!
what is the main lesson you take away from this challenge and how do you think it can transform your next creations?
Your handling of ingredients and the way you tell your process tells us about someone who doesn’t just follow a recipe, but thinks like an ice cream maker. We would love for you to share this photo on your Instagram stories raving about @scoolinary_es and Chef Sergio Dondoli @sergiodondoli ! So more Scoolinars are encouraged to challenge their limits 🍨✨.

@soldamiani Thank you very much Sol ! If you could try it … the taste is delicious. Today I took it to my sister’s house to try it and her face has been delicious amazement at the first spoonful. So much so that she has decided to buy an ice cream maker! Now it’s my turn to teach her how to make ice cream😅
The main lesson ? Well, if you want something good and homemade you have to spend some time and not use the Thermomix that does it in a few seconds. Nothing to do with the ice creams I used to make before. My husband asked me today: why did you buy a carton of whole milk in addition to the semi-skimmed? My answer: because this summer I will make a lot of ice cream of all flavors. Here you don’t buy ice cream anymore !!! 🍧🙌
Yes, they are already raving on my Instagram 😉❤️❤️

Speechless. 🙌🙌🙌🙌 It’s simply beautiful. Adding cherry compote is a great idea, very original, that elevates the whole proposal. The presentation is wonderful, and so are the photos.

              Come on, I don’t need to see more… 🏆🤗

@beatriztorijagmail-com Oh girl, thank you very much ! But the idea of the compote is from the master Dondoli that in his course he does wonderfully. I have only followed his steps and I will tell you that this ice cream right now is my favorite and look I’ve eaten rich ice cream. There is still much to discover, his course is wonderful and the rest that I’ve seen looks great 🙌❤️

@loles-mhotmail-com don’t take credit, even to follow the directions of a recipe you have to have hand and art… and with this ice cream you squander them 🥰. I’ve read here that your sister is convinced to buy the ice cream maker… me too! …I’ll ask you for some advice. Not for the challenge, I have two or three weeks ahead of me very complicated, but surely after ☺️

@beatriztorijagmail-com Well, I am very glad you decided to buy it because you will be happy. The only “catch” it has is that you have to put it in the freezer at least 24h before using it, I have it all summer because I have room. Otherwise it’s great. I will be happy to help you with whatever you need. I made another one today and it flipped me out with just a small spoonful. Let’s see tomorrow when I taste it properly. 🤣
