      Zucchini carpaccio with hazelnut pesto.

The recipe is from Lorena Hidalgo and Josep Armenteros’s course “Cooking with nuts and dried fruits”.

In my case I used hazelnuts and an old toasted cheese for the pesto.

      I loved the result.

what a delicate dish full of freshness! 🌿 The composition is harmonious, the zucchini rolls are impeccably shaped and the brightness of the pesto with the toasted hazelnuts gives it a sophisticated and tasty air. a photo that makes you want to eat with your eyes!
Surely Lorena @lorenahidalgojoseparmenteros will be proud to see how you took her proposal and brought it to your terrain.
what was the main creative decision you made when adapting the recipe? And how did the old cheese in combination with the hazelnuts surprise you?

@Sol Damiani muchas gracias Sol.

Mercedes, your presentation is a visual delight: the symmetrical arrangement of the zucchini and the clean background enhance the dish. The brightness of the pesto adds freshness. what is your favorite nut for savory dishes: hazelnut, walnut or pine nut. Thank you for sharing it with the community.❤

Hi Mercedes, a super summery and nutritious dish! I love how you have understood the dish and made it your own. Nuts have an incredible versatility and each one brings something different. No wonder you ate the pesto with regañás or crackers… what other salads or cold dishes can you think of with nuts? So we are making a summer recipe book

Zucchini carpaccio paired with a hazelnut pesto sounds so fresh and elegant. Love the twist of using toasted cheese in the pesto for that extra depth!
