A couple of years ago I learned this technique of solid oil in the course Cocina al Vacío en Casa by Toni Botella (2 years already!!). Since then, there is no shortage of small oil tablets in my freezer that I use when I vacuum pack.

Today I was making pork loin, I remembered the course and I wanted to share it for those who still do not know about it because it is fantastic for liquids. All you have to do is fill the molds and put it in the freezer.

If you have not yet done the course, I recommend it because it is very complete 😉.

what a great idea, Maloles! I found it very interesting how you explained it, very clear and easy to understand. Having those little oil pills always ready is a great solution, it sure saves you time and also helps to flavor it in a practical way.
have you tried making pastillas with other ingredients besides oil? I was curious to know if you can also make them with broths or juices for other uses. Thanks for sharing and recommending the course! ❤️

I love it, I’ll write it down and watch the course. I bought a vacuum sealer and I have to see ways to take advantage of it. At the moment, I have used it to perfume chocolate.

Such a smart and practical technique! The solid oil tablets must make cooking and vacuum packing so much easier, and it’s great to hear it’s been a game-changer for you. I can see how this method really elevates the flavors when you cook, especially with pork loin! Thanks for sharing this tip. I’ll definitely keep it in mind for future cooking adventures. And I’ll have to look into the course. It sounds amazing! 🍽️🙌

what a joy to read this! 💥👏
Mastering that solid oil technique for vacuum cooking is not only practical, it’s quite the game changer! The detail of always having frozen EVOO tablets ready to use shows your organization and love for precision. The tenderloin you are preparing promises uniform flavor and juiciness thanks to that fatty touch in just the right place.
have you tried other solid fats to vary the profile of the dish, such as butter or duck fat?
Thanks for sharing this helpful tip with the community 🙌.
