    Beef Tenderloin with prosciutto and Lemon Foam.

    I used the same plate as for the ravioli but, it looked the most appropriate to me

    I hope this counts, I only have worked with foams at school using a siphon. For this one I had to use a technique that doesn’t require a siphon.

    Those who eat well live happily!

    Polpette all’essenza di limone do sorrento served with plenty of Lemon Sauce.

    Lemon scented Meatballs smoked with Lemon Wood in the BBQ.

    Ground some dry aged beef with higher fat content as I was smoking them instead of frying.

    This challenge inspired me a lot this weekend. I have already shared my Sorrento meatballs, and now here are my Babà al rum with seasonal fruits from our garden.
