A beloved Persian rice dish, also known as Dami Baghali, made with long-grain rice, fried onions, turmeric, and lapeh baghala (split fava beans). Traditionally enjoyed with a fried egg on top, here reimagined with a modern plating style while keeping the warmth and comfort of this timeless classic.

This looks beautiful, Bahar. The plating keeps the comfort of the dish, but gives it a much lighter, more modern feel. I really like the contrast between the bright turmeric rice, the cloudy egg, and those greens on top. How did you decide which traditional elements to keep untouched?
