Trucha arco iris – Sabzi Polo
Para este reto, elegí la trucha arco iris por su delicada textura y su sabor limpio, que marida de forma natural con las hierbas y las notas cítricas. Trabajé con un corte con piel, centrándome en el calor controlado para conseguir un dorado adecuado de la piel al tiempo que se mantenía la carne húmeda y tierna.
El pescado se sirve con arroz de hierbas persas (Sabzi Polo), un maridaje tradicional, reinterpretado mediante un emplatado moderno respetando la identidad original del plato.
Se ha prestado especial atención al punto de cocción para preservar la textura y el sabor natural del pescado.

Rainbow Trout – Sabzi Polo
For this challenge, I chose rainbow trout for its delicate texture and clean flavor, which pairs naturally with herbs and citrus notes.I worked with a skin-on cut, focusing on controlled heat to achieve proper browning on the skin while keeping the flesh moist and tender.
The fish is served with Persian herb rice (Sabzi Polo), a traditional pairing, reinterpreted through modern plating while respecting the original identity of the dish.
Special attention was given to the cooking point to preserve the fish’s texture and natural flavor.
