Great second entry, Chef! The tuna and gazpacho feel fresh, Mediterranean and very well connected. I like the play between acidity, raw vegetables and that herb ice cream detail, it gives the dish a curious, refined twist. What role did you want the goat cheese roll to play in the balance?
