Well, i love cooking fish. I have plenty of dishes with fish. Lets apply a couple of them.
This is a mackerel mosaic, salted with a light western style ponzu sauce, finished with a dark beer glaze and a salad with lambs lettuce, pine nuts and raisins.

Great entry, Chef! The mackerel mosaic has a very personal signature, clean, visual and thoughtful. The ponzu, beer glaze, lamb’s lettuce, pine nuts and raisins build a lovely balance of fat, acidity and sweetness. What led you to pair mackerel with dark beer? Strong #fishchallenge work.
