In the abundance of courses I haven’t done yet, I am wondering if people have suggestions for baking-related courses that they enjoyed? Which were your favourites? 😃👀😇

Great question, with so many courses it’s easy to want a little compass. Let’s ask one of our most beloved bakers around here, Mercedes @mercedesdelgado1977gmail-com , what baking-related courses she’d recommend. I’m sure the community has some delicious favourites to share! 👀🥐

@soldamiani Especially if you’ve gone through quite a lot of them that had distinctive names (e.g. I’ve seen all the Antonio Bachour ones and many more that I could judge based on title whether they are going to be interesting to me), and now there is even more to put into priority order 🙈

Taking the joke aside for a second 😄 What would you like to start baking, and what do you already feel confident with?

@soldamiani Hahaha it needs quite a bit of time to start all!
I think I am fairly confident with most things on the sweet end by now (have done the courses on viennoiserie, petit gateaux, realistic desserts, plated desserts, entremets, bonbons, cookies, choux, tarts, macarons – I think I completed around 40-ish pastry courses now that I am looking at the list 🙈). So I think on the concrete baking end, I am more in on starting to draw my own desserts, from which I would like to make a selection this summer using things I’ve learnt in the past year (I started in pastry and baking in last September, so it will be interesting to see where I’ve got to).
Course-wise what I am now a bit more keen on finding out more about is pastry using molecular cuisine + learning pastry ideas from others that are non-standard/very creative – but it is hard to tell at the beginning what will keep me intrigued. Anything that comes to mind in this sort of category? 👀

Te entiendo, hay tantos cursos que es difícil elegir y, a veces, por lo menos a mí me pasa que voy haciendo varios a la vez.
Te recomiendo algunos, por si te sirve:
• Pastelería fresa y ligera
• Los de Elena Adell y los de Hans Ovando son muy completos y están muy bien explicados.
•Los de Josep Maria Ribé , Sandra Ornelas y Miquel Guarro también están muy bien.
▪︎ Si quieres conocer un poco de Pastelería vegana, el de Bases de la Pastelería Vegana es fantástico.
• De pasteleria creativa los de Leonardo Espinoza son fantásticos.
• Si te gusta la Pastelería más innovadora los de David Gil
