Algunos días te hacen añorar lugares que no puedes visitar.
Hoy era un día soleado, cálido y lleno de esa tranquila promesa del verano. Y de alguna manera, mi apetito viajó más rápido de lo que yo podía. Fue directo a Grecia.
Así que lo seguí con comida.
Queso feta, tomates maduros, cebolla roja, pimiento picante, hierbas y aceite de oliva se metieron juntos en el horno. Nada complicado, nada forzado. Sólo ingredientes sencillos que saben convertirse en algo más cuando intervienen el calor, el tiempo y un poco de imaginación.
A medida que el queso feta se ablandaba y los tomates soltaban su jugo, la cocina empezaba a cambiar. El olor a aceite de oliva y hierbas llenaba la habitación, el pan se estaba tostando a un lado y sonaba música griega de fondo.
Esa es una de las cosas más bonitas de la cocina.
Incluso cuando no podemos viajar, la comida puede abrir una pequeña puerta. Un plato puede transportar un recuerdo, un lugar, una estación, un deseo. Puede trasladar la mesa de tu casa a otro lugar completamente distinto.
Por un momento, no se trataba sólo de feta horneado y pan tostado.
Era una pequeña taberna junto al mar. Una mesa de madera. Una copa de vino. Sillas azules. El aire cálido del atardecer. El sonido de las olas lo suficientemente cerca como para creer en él.
Y todo eso surgió de una fuente de horno, unos pocos ingredientes sencillos y la magia silenciosa que se produce cuando la comida recuerda un lugar para nosotros.

Some days make you miss places you are not able to visit.
Today was sunny, warm, and full of that quiet promise of summer. And somehow, my appetite travelled faster than I could. It went straight to Greece.
So I followed it with food.
Feta cheese, ripe tomatoes, red onion, spicy pepper, herbs, and olive oil went into the oven together. Nothing complicated, nothing forced. Just simple ingredients that know how to become something more when heat, time, and a little imagination are involved.
As the feta softened and the tomatoes released their juices, the kitchen started to change. The smell of olive oil and herbs filled the room, the bread was toasting on the side, and Greek music was playing in the background.
That is one of the most beautiful things about cooking.
Even when we cannot travel, food can open a small door. A dish can carry a memory, a place, a season, a wish. It can move the table from your home to somewhere else entirely.
For a moment, this was not just baked feta and toasted bread.
It was a small taverna by the sea. A wooden table. A glass of wine. Blue chairs. Warm evening air. The sound of waves somewhere close enough to believe in.
And all of that came from one baking dish, a few simple ingredients, and the quiet magic that happens when food remembers a place for us.
