Did you test different proofing times for texture? Or have you already found the perfect proofing time and decided to stick with it? Sweet progress, keep going!

@soldamiani Thank you, dear! I did play a bit with the proofing because with doughnuts, those small timing changes really show in the texture. I think this batch found a very happy place… soft, light, and just stubborn enough to disappear faster than planned. 😄
