Tonights dinner was made from the Thai Cuisine course from @intu-on-kornnawong . Here is my version of Lamb massaman curry. I have never had it made with lamb shanks before, it has always been the takeaway food shops version made with beef cubes. I like this one better.

Thank you for sharing your version of Massaman curry. It looks delicious, and I love that you tried it with lamb it must give it such a special flavor. It’s wonderful to see how the same dish can change so much depending on the protein used.
Did you notice any difference in the flavor or texture compared to the beef version you used to have? We’re so glad to have you sharing in the community. 🙌

@sussan_scoolinaryteam Thank you for your kind comments, Both the overall flavour and the texture of the two different protiens lend their own to the dish. The lamb shanks were delicious in their own right, the beef chunks in the original recipe make for a richer tasting sauce. It’s hard to decide which version I like the most.

@judyrusselllive-com-au Thank you for sharing your experience, Judy. It’s so interesting how you describe each protein bringing its own nuances to the dish: the lamb with its unique character and the original meat enhancing the sauce. I love that you see them as two equally valuable versions, each with its own charm. That’s the beauty of cooking being able to rediscover the same dish in different ways! ✨

That’s a really cool twist on Massaman. I like how you’ve gone from the “standard” takeaway version with beef cubes to slow-cooked lamb shanks.

@lanamihajlovic Thanks for your words of encouragement. Sadly this was not my idea to substitute the beef for lamb shanks as it was part of the recipe, I wish it was my idea as it was delicious.

That looks absolutely delicious, Judy! 🔥 The richness of that curry sauce is stunning – such a deep, glossy color that instantly makes you want to grab a spoon. Using lamb shanks was a brilliant choice, it must add incredible depth and tenderness compared to the usual beef cubes. 👏
