        Hi Cliff!
Thank you for joining the #IceCreamChallenge with such an original and heartfelt creation. That ube macapuno ice cream isn’t just mesmerizing in color—the plating is clean and eye-catching too. The choice of salted egg yolk crumble and crispy tuile really takes the experience to the next level. Your technical precision shines through, and the story behind it makes it all the more special.

Have you thought about exploring other traditional Filipino desserts with this same modern approach? It would be amazing to see you continue down that creative path.
Your wife must be incredibly proud! Keep cooking from the heart—that’s where the magic is. ✨🍨

        • @Sussan Estela Olaya Thanks so much, Sussan! I really appreciate the kind feedback — means a lot!

I’m definitely open to experimenting more with Filipino cuisine, especially with a bit of Australian fusion. I’ve been playing around with ideas like a mango float pavlova, and crocodile adobo is next on the list! I’m also keen to create a proper Filipino-style curry — something that uses traditional Filipino ingredients but leans on Thai-style techniques, since I feel the Philippines is still missing a truly standout curry dish. Lots to explore and I’m loving the journey so far!

Your passion for exploring Filipino cuisine with such a creative and technical approach is truly contagious. That floating mango pavlova sounds absolutely delicious! And crocodile adobo… wow! We love how you’re breaking boundaries and reimagining traditional flavors in bold new ways.

The idea of a Filipino curry inspired by Thai techniques also sounds really promising. You’re absolutely right—there’s a whole world to discover and reinvent within Filipino cuisine, and it’s a privilege to follow along on your journey.

Thank you for sharing your process with such passion and generosity.

We can’t wait to see what you create next! ❤️
