Level:Sous Chef

Accordion Potatoes with Homemade Sweet Chili Sauce
#PatataChallenge
Profile: Amateur
Ingredients: Potatoes (red); Olive oil; Garlic; Crushed red pepper; Salt; Water; Sugar; Vinegar; Chili flakes; Cornstarch (dissolved in water, for thickening); Salt
Techniques used:
Accordion cut: Potatoes are sliced using the “accordion” technique – shallow, parallel cuts on both sides of the potato, with chopsticks or wooden spoons placed on each side to prevent cutting all the way through.
Soaking: Cut potatoes are soaked in cold water for 30 minutes to release excess starch and help open up the slices, then dried thoroughly.
Marinating: Potatoes are brushed with a mixture of olive oil, garlic, crushed red pepper, and salt, making sure the marinade gets into every cut.
Baking: They are baked at high temperature until crispy on the outside and soft on the inside.
Homemade sweet chili sauce: In a small pot, water, sugar, vinegar, garlic, and chili are simmered until well combined and flavorful. Dissolved cornstarch is added at the end to achieve a syrupy texture.
Brief description of the concept behind the dish:
Accordion potatoes are visually striking, fun to eat, and packed with savory, aromatic flavors. The homemade sweet chili sauce adds a sweet-and-spicy contrast that elevates every bite. It’s a blend of rustic comfort and vibrant Asian-inspired flair, simple to make, but impressive on the plate. A small culinary showstopper with a big personality.Traducido del inglésmilenaklanjac, Mercedes Delgado de Miguel y6 más19 Comentarios-

What a delicious idea, Lana!
I loved how you managed to make something as simple as potatoes look so appetizing and special. The presentation is very well done, and those chopsticks with the sprinkle of herbs on top make them look even more inviting.
And the sauce seems like the perfect match to go with those potatoes. Did you try using different types of chili to give the sauce other flavor notes, or was this mix your favorite from the start? I had one more question, did you use any special kitchen tool to get the potatoes to look that beautiful?
Thanks for joining the challenge! I was thinking this would be a great idea for an afternoon snack with friends.😊

@Sussan Estela Olaya ¡Muchas gracias, Sussan!

@Sussan Estela Olaya Thank you so much, Sussan! I’m really glad you liked it. I had a lot of fun making these accordion potatoes. They’re such a playful twist on a classic!
For the sauce, I used chili flakes. I love the gentle heat they bring, and they paired nicely with the creamy base. I’m definitely curious to try other types of chili next time for more layered flavors.
As for the shape, no fancy tools, just a little trick using chopsticks as guides while slicing. That way, I got the accordion effect without cutting all the way through. It’s simple, but the result looks so special once baked!
And yes, definitely a great idea for an afternoon snack with friends. I already have a list of people asking me to make them again! 😁

🎵 “Come on baby, let’s do the twist!” 🎵 Because when potatoes start twisting, you know something delicious is about to happen. YEAH!
“Twist & Heat” is everything the name promises — bold, vibrant, and just a little fiery. These accordion-cut potatoes bring playful geometry to the plate, each groove catching hints of garlic, chili, and golden roast. The contrast between the crisped ridges and the tender insides is pure joy. But the real magic happens when that homemade sweet chili sauce hits — a sticky, tangy, spicy kiss that turns the whole thing into a flavor dance.
😉Visually captivating and bursting with boldness, this dish doesn’t just show off skill with a knife — it shows a fearless sense of style and flavor.😋👏
What inspired you to go with the accordion cut — technique challenge or flavor strategy?-

@Sol Damiani Thank you for such an energetic and spot-on comment. It made me smile from the first line! The accordion cut was actually a bit of both: part technique challenge (because I love playing with textures), and part flavor strategy. I wanted every groove to soak up the seasoning and catch just enough of that sweet chili glaze to make each bite pop.
Truth be told, I’ve wanted to try accordion potatoes for years, but somehow never found the time. It felt like the universe kept putting it off, almost as if it was saving the idea for this exact moment. This potato challenge came as the perfect excuse, and suddenly, everything just clicked. Like it was always meant to be Twist & Heat. 🎶
