Who is Raúl Pérez?
His beginnings date back to 2005, with his first introduction to the world of specialty coffee. From then until now, he has progressed day by day, building both theoretical knowledge and the manual skills needed to prepare the finest coffees.
He worked at Grupo Novell in Madrid, where he was involved in customer consulting, barista training, and venue management. He held this position for 14 years, until 2019, when, after extensive learning, he earned the title of Authorized S. C. A. Trainer.
Since October 2019, he has been the head of the Cafés Baqué Coffee School in Madrid, delivering all kinds of barista courses and training. Baqué is a family-owned company committed to combining tradition and innovation to meet the needs of all its customers—individuals, hospitality businesses, and companies alike—through sustainable development and the capacity to roast more than 3 million kilograms of coffee per year.
In 2020, he became a member of the Training Committee of the Coffee Forum, as well as an accredited instructor for the Coffee Forum, combining this role with his work at Cafés Baqué.
Who is Karlos Calvo?
Born into a family in the hospitality industry, Karlos Calvo took his first steps in the sector at the family café. After two years of experience, he continued his training in prestigious establishments before making the leap into entrepreneurship: he opened his own café, which he managed simultaneously with his restaurant for 19 years.
His specialization in the world of coffee began, driven by the desire to improve the quality of service in his establishments. This led him to train rigorously in filter coffee, barista skills, and sensory tasting. Determined to share his knowledge with other professionals, in 2019 he obtained the AST (Authorized SCA Trainer) certification. After gaining experience in the roasting sector, he founded Área 51 Barista, an academy dedicated to training hospitality professionals, where he incorporated the art of coffee roasting to offer a technical and comprehensive view of the product.
Since February 2024, he has been the head of the Cafés Baqué School in the Basque Country, where he delivers training and barista courses for all levels. Among his certifications and recognitions are:
- 2020: Certification as an Authorized Trainer in Spain by the Latte Art Grading System and achievement of the Black Pitcher level.
- 2021: Award for Best Cappuccino in Spain, granted by the Coffee Cultural Forum.
- 2022: Runner-up in Spain (Red Pitcher) in the Latte Art Grading System.
- 2024: Award for Best Café con Leche in Spain at CoffeeFest Madrid.
