Mónica Ríos Conde is a pastry chef and Director of Innovation at the Gato Dumas Institute in Colombia. Recognized for her Pastry Engineering approach, she brings together applied science, method, and creativity to transform classic techniques and produce contemporary results with consistency. Her work focuses on helping pastry chefs to understand in order to create: mastering the structure of each preparation, measuring variables, and preventing mistakes through technical judgment.
She has designed training programs such as Pastry Chef PRO, themed workshops, and masterclasses focused on problem-solving in pastry.
