Who is Justin Horne?

Justin Horne is an eco chef, author, presenter, lecturer and avid forager. He was Chef Patron of Can Mimosa in Ibiza, a farm to table restaurant. Justin is also a member of Chefs’ Manifesto and UNSDG2 Advocacy Hub. In 2015, Justin launched Tiny Leaf, the first zero waste, organic, plant based restaurant in Europe, diverting 50 tonnes of food surplus from landfill in 1 year. He took over at Can Mimosa in 2022 creating a large kitchen garden and working closely with the local artisans and regenerative farmers to create a circular seasonal menu at the restaurant.
