Jose Hidalgo began carving ham by hand professionally in 1998, at an event at the Zafra Fair alongside the Jabugo Ham Regulatory Council. Since then, his work has centred on professional ham carving and ham service at events.
Throughout his career, he has approached carving from a perspective based on technique, precision and respect for the product. His method pays special attention to the proper use of tools, keeping the ham level, slice thickness, plating and making full use of the ham.
In addition to his hands-on experience, he shares his knowledge through training, teaching professional techniques for working each section of the ham, reducing waste and achieving better yield and presentation.
