Chef! There’s a very clear concept behind this dish, and it really shows. The tuna is presented cleanly, the vegetables add height and color, and the combination of sesame, miso, and roasted bell pepper works very well thanks to the contrast of fat, umami, and sweetness. Visually, I might try giving the tuna a little more prominence: the line of gel crosses the plate quite a bit and competes with the pieces of tuna. I’d make a second version changing only that, keeping the rest the same, and compare which one better draws the eye. Were you looking for a more graphic plating, or for the tuna to be the clear star of the dish?

Chef! Este plato tiene una idea muy clara detrás, y se nota. El atún está presentado de forma limpia, las verduritas aportan altura y color, y el conjunto con sésamo, miso y pimiento asado tiene mucho sentido por contraste de grasa, umami y dulzor. Visualmente, quizá probarÃa a dar un poco más de protagonismo al atún: la lÃnea de gel cruza bastante el plato y compite con las piezas. HarÃa una segunda versión cambiando solo eso, manteniendo el resto igual, y compararÃa cuál dirige mejor la mirada. ¿Buscabas un emplatado más gráfico o que el atún fuese claramente el protagonista?

Siempre busco que el ingrediente principal sea el protagonismo, pero eso no quita que también quiera que el plato entre por los ojos antes de comerlo.
