Well, since Sol invited us to share our tests and experiments here… Here goes.
I just finished Robert Ruiz’s course on fermentation and decided to try making my own kefir. And here I am, with a culture that just keeps eating and growing.
I’m trying to give the kefir a double fermentation to make it a bit milder.
In the photo, here’s the kefir just as I prepared it tonight for dessert: with some chopped apple, a few walnuts, some raspberries, and a few cookie pieces. Very tasty and very healthy.Level:Executive Chef
Bueno, pues recogiendo la invitación de Sol a compartir por aquí nuestras pruebas y experimentos… Ahí va.
Acabo de terminar el curso sobre fermentaciones de Robert Ruiz y me he lanzado a hacer mi propio keffir. Y ahí estoy, con un hongo que no deja de comer y crecer.
Estoy probando a dar al keffir una doble fermentación, para que esté así más suave.

Jajajajaja… Mi marido dice que le recuerda a una película muy antigua en blanco y negro, no sé si la conoceréis: the blob, que se tradujo como ‘la masa devoradora’, en Argentina creo que se tradujo como ‘la mancha voraz’. Bueno, con ese título, no os hace falta que os explique mucho… 😂😂😂

¡Qué gusto ver que te animaste a experimentar con el kéfir, Bea! 😊 Y además, con doble fermentación, ahí ya hay curiosidad de la buena. La combinación con frambuesas, manzana y nueces tiene pintaza. ¿Has notado mucha diferencia de sabor o textura respecto a la primera fermentación?

Con una sola fermentación está más ácido, más fuerte, incluso un pelín picante. Con la segunda fernentación queda más suave.
Con las frutas, nueces y galletas está riquísimo 😋1

¡Qué buena pinta!. No conozco el procedimiento de elaboración del kéfir y por lo que comentas se me asemeja a la masa madre que también hay que estar alimentandola y cuidandola.

Si, es muy similar. Es un fermentado de la leche, parecido al yogur. De sabor es algo más ácido y fuerte, pero dicen que tiene más propiedades.

Hi everyone! I really like the idea of the Lab because we can share our experiments, learn from each other, and compare our results.
I’m particularly interested in kefir because of its health benefits, and so far, my experiments with it have been very successful.
Regarding acidity, I’ve found that using fewer kefir grains and tasting the kefir after 12–18 hours can help control the acidity. I usually ferment it at around 20°C.
My usual ratio is 2.8 liters of full-fat milk with 50 g of kefir grains. I ferment it for about 18 hours, then place it in the refrigerator. Once it is chilled, I strain it.

It’s great that you’ve decided to experiment with fermented foods—it’s a fascinating world and offers huge benefits for your diet. 👏🏽
You should try straining it sometime to separate the solids from the whey—you’ll get a firmer texture in the kefir, and you can use the whey to make naturally fermented fruit drinks. It’s really interesting how one product can lead to so many others.

Qué genial qué te hayas animado a experimentar con fermentos, es un mundo fascinante y trae grandes beneficios a la alimentación. 👏🏽
Alguna vez deberías probar filtrarlo para separar sólidos del suero, obtienes una textura más firme del kéfir y con el suero puedes hacer bebidas de fermentación natural con frutas, es muy interesante como un producto puede proveer de otros más.
