In the shadow of Cardamom
White chocolate and Cardamom ice cream in Lotus Land
I told you that I had prepared another presentation with the ice cream from my last post and here it is.
It is an ice cream with character. To taste it is to dream beautifully under a shady tree. And so I present it, with the chocolate tree and cotton candy. I have accompanied it with a Lotus cookies earth that gives an unexpected twist to the original recipe of the master Sergio Dondoli.
Today is the International Chocolate Ice Cream Day and this has been my contribution to a challenge that was proposed to me on Instagram last month and today has seen the light. You can see it here.
As you have the ice cream recipe in the course, I will only tell you that for the tree I used about 300 gr of chocolate to melt. I did not make tempered because I wanted to “age” the trunk to give more realism (I did it with a little cocoa powder). So once melted and with a pastry bag I was forming the trunk over ice water with ice. I made a base and put some melted chocolate to “glue” the trunk.
I broke some Lotus cookies to make the ground.
The cotton candy was made when everything was already assembled and decorated with edible flowers (I put oxalis that I have in my garden) and cardamom seeds. Finally, the ice cream and white chocolate balls.
I will make a reel with the process but I won’t be able to put it all here. Maybe I will try to put little pieces in case someone wants to see it.
I’m happy with the result, even though I had some stumbles while making the tree. You know, the first time everything gets messed up😅😎
* The ice cream comes out a bit melted because here the container could not be cooled in the freezer. Look how complicated it is to photograph ice cream, eh? 🤣

Helado de chocolate Blanco y Cardamomo en Tierra de Lotus
Os dije que había preparado otra presentación con el helado de mi último post y aquí lo tenéis.
Es un helado con carácter. Saborearlo es llevarte a soñar bonito bajo un árbol a la sombra. Y así lo presento, con el árbol de chocolate y algodón de azúcar. Lo he acompañado con una tierra de galletas Lotus que le da un giro inesperado a la receta original del maestro Sergio Dondoli.
Hoy es el Dia Internacional del Helado de Chocolate y esta ha sido mi aportación para un reto que me propusieron en Instagram el mes pasado y que hoy a visto la luz. Lo podéis ver aqui.
Como tenéis la receta del helado en el curso, sólo os diré que para el árbol utilicé unos 300 gr de chocolate para fundir. No hice templado pues queria “envejecer” el tronco para que diera más realismo ( lo hice con un poco de cacao en polvo). Así que una vez fundido y con una manga pastelera fui formando el tronco sobre agua helada con hielo. Hice una base y puse un poco de chocolate fundido para “pegar” el tronco.
Rompí unas galletas Lotus para hacer la tierra.
El algodón de azúcar lo hice cuando estaba ya todo montado y decoré con flores comestibles (he puesto oxalis que tengo en mi jardín) y semillas de cardamomo. Por último, el helado y bolitas de chocolate blanco.
Haré un reel con el proceso pero aqui no podré ponerlo entero. Quizás intentaré ir poniendo trocitos por si alguien lo quiere ver.
Estoy contenta con el resultado, a pesar de haber tenido algún que otro tropiezo al hacer el árbol. Ya sabéis, la primera vez todo se lía😅😎
* El helado sale algo derretido porque aquí el recipiente no se podía enfriar en el congelador. Mira que es complicado fotografiar helado, eh? 🤣

¡Qué preciosidad, Lo! La propuesta tiene una narrativa muy cuidada: el árbol de chocolate, el algodón de azúcar y la tierra de Lotus crean una escena con mucha personalidad, y la foto acompaña muy bien. ¿Qué parte del proceso te retó más y qué te gustaría explorar ahora? 😍 (No contemos lo dificil de fotografiar el helado, que ya lo has mencionado)

@soldamiani Gracias Sol!. La parte que ha sido un reto ? Pues el dichoso tronco del árbol jajjajj . Es el primero que hago y no ha quedado como yo quería. Hace tiempo que no trabajo el chocolate y ya no recordaba bien el tema del agua helada. En la primera de cambio, se fue al fondo como el Titanic 🤣…No había puesto mucho hielo y claro apenas se sujetaba pero lo solucioné poniendo mas hielo y el segundo intento fue como la seda aunque no quedó como yo quería, un árbol estilizado y de ramas largas y al final ha salido mas viejo que yo. Pero oye, que tiene su rollo, no? 😎
De todas formas, es verdad que no podemos relajarnos y creer que tenemos todo controlado. Porque cuando algo no se practica pues se olvida y mas si tienes una cabeza como la mía que ya la memoria va fallando 😅.
Voy a mirarme el curso de chocolate que seguro me vendrá bien.-
