Potato and Sea Bass Salad
From Nino Redruello’s Advanced Techniques with Vegetables course
I was looking forward to finish this dish and even more to try it because although it may seem everyday at first glance, I assure you that each preparation has its time and care but above all each of them is an important part to achieve this great dish full of flavor and history.
The pickled fennel that you saw a few days ago is an important part and it was the first thing I did. Something new for me because it is the first time I do it.
The fish stock collagen resulting from cooking fish scraps and fish heads is very important. When I asked my fishmonger to keep the scrapes that he usually throws away, he looked at me a bit funny 🤣.They were hake and they turned out great. They are cooked with just a little water because they are releasing their own juice, then strain and reserve until it’s time to use it. But I had to go out that day due to an unforeseen event and decided to freeze it. With this collagen and half EVOO, half sunflower oil I made apil pil mayonnaise which is the secret to give an umami touch to the dish.
White onion cut with a mandolin, well washed. It is left in cold water until it loses its strength.
The sea bass in salt gave me a new approach to the preparation of salt, which must be moistened little by little until it cakes before covering the fish and is made with two types of salt. Cooked for 35 minutes at 180ºC and with 20% steam (I put a pan with water at the bottom of the oven). Then let it rest for at least an hour before removing the salt, take out generous pieces without bones and spread with EVOO while still hot until it is time to plate it. It came out perfect!
Finally, some boiled potatoes (I boil them with the skin and a little salt) which are the base of the dish. These are served warm.
The plating: Potatoes, Sea bass in salt, pil pil mayonnaise, pickled fennel, onion, Piparras and a few sprigs of parsley. I also added some pink peppercorns to give that spark of color to the dish.
We loved it! My husband, who days before was already saying what the fennel would be for, almost clapped his hands. I assure you that this dish will stay at home for the rest of our lives❤.
I recommend the course but especially this recipe. Wishing to try another of Nino Redruello’s wonderful dishes.

This is absolutely beautiful. In my very very humble opinion, I would swap the parsley with a more elegant herb and I would use fewer of it. Out of this, the plate is awesome

@fabrizio-vindigni Thank you very much Fabrizio. I value your opinion very much and I agree with you. Maybe it’s too much parsley but I decided to replicate the chef’s presentation because it’s the first time I make the dish. It’s like a rule I have out of respect for them. Although now that I think about it, I put the pink pepper and that was not in the original hahahaha 😅 You have to try the recipe, it’s a marvel

@loles-mhotmail-com well if you replicated a recipe of another chef then yes, you’re absolutely right. Plus… I don’t have a good relationship with parsley, haha!

Lol it has no fault, but for some reason in italy many restaurants OVERUSE the poor guy. Pasta with clams? PARSLEY. Fish lasagna? PARSLEY. Pork? Here’s your parsley rain. Generic salad? Oh my wouldn’t you add that touch of parsley? PARSLEY SALAD? LET’S ADD SOME PARSLEY GARNISH
When they put parsley without a reason, even sprinkled on the empty space of large dishes, i blow it away on the floor. That’s how you show foodie dominance 🤣

What a great dish, Maloles, I’ve been looking at the photos for a while and I’m like hypnotized, I can’t look away. 🥰🥰🥰🥰 Really, it’s amazing: the dish, the photos, and the way of telling the process, which has led us to your kitchen.
By the way, I’m using the capital plural 😆😆 but I’m sure more than one scoolinary compi agrees with what I’m saying.
If I was already looking forward to the course, I told you the other day with the fennel, now it’s urgency: even if it takes me hours of sleep… the next few days will not pass 😅😅

Aquí estaremos, esperando el próximo capítulo… 📖👩🍳1-
