      #GreenChallenge.

My second proposal for the challenge is more tasty than visual. It’s grilled avocados with a salad of braised chicken, hard boiled egg, sriracha, ricotta cheese and cucumber, with pico de gallo and spicy avocado mayonnaise. I’ll leave the recipe in the comments. Since I had leftover stuffing, I made some tostas that were very good.

Grilled avocados stuffed with chicken salad. Ingredients: Boneless chicken thigh and thigh, ricotta cheese, avocados, sriracha sauce, 2 eggs, tomatoes, red onion, cilantro, limes, 1 cucumber, salt, mayonnaise and pepper. Preparation: Cook a couple of eggs until hard-boiled, cool, peel and set aside. Grill the chicken so that it is cooked on all sides, but without burning, grind it together with the ricotta cheese and hard-boiled eggs, it should not be mush, but rather small pieces, season with sriracha, pepper and salt, On the other hand, peel the cucumber, cut the skin into strips not too large and cut the cucumber flesh into small cubes, add some cucumber cubes and some strips of cucumber skin to the salad, reserve in the refrigerator covered. Take half an avocado, 4 tablespoons of mayonnaise, salt, pepper, sriracha and make an avocado mayonnaise. Cut the tomatoes and red onion into small cubes, add chopped cilantro, salt, sriracha, the juice of one lime and set aside. Open the avocados in half lengthwise and remove the stone. Place the avocados on the grill or in a frying pan on the flat side until golden brown and remove. Fill with the chicken salad and add some pico de gallo. Season with the avocado mayonnaise and serve.

Chef Antonio, what a great second submission for the #GreenChallenge! 🌿🔥 These grilled avocados have character: the contrast between the smokiness of the grill and the creaminess of the filling creates an intense and flavorful😋 bite. The ensaladilla is well balanced with the fresh touch of the pico de gallo and the sparkle of the spicy mayonnaise. Visually, the repetition of the avocados in a line conveys order, although perhaps you could play with heights or circular arrangement to give more dynamism to the plating. Even so, the strength here is in the gastronomic idea, in how you made green the protagonist with technique and flavor. what would you say was the biggest challenge in this preparation: achieving the exact grilling point of the avocado or balancing the spiciness in the mix? 🌱

Great job, Tonio (do you like to be called Tonio? haha Me always giving nicknames when no one asks for them)

what a great proposal, Antonio! I love how you combined such fresh yet powerful flavors in those grilled avocados, I’m sure the spicy avocado mayonnaise gave them an incredible touch. And taking advantage of the filling in tostas is a very practical and delicious idea. 😋

I like this idea a lot! Grilled avocado already feels a bit indulgent on its own, and then you’ve packed it with all those flavors that hit every note… fresh, creamy, spicy, and a little smoky. 🥑✨
