Purslane with clams, codium and sea purslane

Green, and marine… because a legume dish with seafood can also be very ‘green’. The verdina is a type of faba bean, a traditional bean from Asturias with a beautiful emerald green color, very fine and delicate, which is usually prepared with fish and seafood. (In case someone does not know this type of bean, I have put a few raw beans outside the dish so you can see them).

One of the most classic preparations of verdina is with clams. I have prepared it in the traditional way, with some extra ingredients to enhance its marine flavor and its green color. I have prepared a fish stock (according to the indications of Ignacio Barrios in his course “Caldos y fondos básicos”). The verdina is cooked with a sofrito of garlic and onion in the homemade fish stock. The clams are opened with white wine, steamed. They are removed and their juice is filtered with a gauze. It is added to the verdinas and in the last minute of cooking, the clams are incorporated.

Usually the dish is finished with a little chopped parsley. Instead of that, I have prepared an emulsified oil with crushed parsley, and with a few touches of this emulsion I have provided the most vibrant green color, so that when I put the spoon in and stir, the parsley floods the whole dish.

In addition, I have incorporated codium seaweed, which is commonly known as “the poor man’s barnacle”, because it has a deep sea flavor, similar to the prized barnacles. It provides that marine flavor as well as a different shade of green, deeper and darker.

Finally, the stew has some raw purslane sprouts, which brings the fresh taste of the vegetable.

Bea, this looks unreal! The plate feels like it whispers both the sea and the garden at the same time. Those emerald verdinas, the clams revealing their marine soul, and that parsley emulsion adding such a vibrant contrast… a true little work of art. I love how you managed to combine tradition with a modern aesthetic touch. You really made the dish look as impressive as I’m sure it tastes. Bravo, amiga! ❤️
