      Santa Fina Cream 2.0

      #IceCreamChallenge

      Amateur profile

I told you days ago when I uploaded the process, this ice cream is a mortal sin. From the Sergio Dondoli Italian Artisan Ice Cream course. The Santa fina cream is one of those ice creams that leave you wanting to repeat and repeat…

I made some pine nuts that together with other natural ones are interspersed between the layers of ice cream.

I have made a sculpture of Isomalt to which I have put food coloring powder. It is the only thing I have added to the recipe because I think it is perfect as it is.

Surprised by this infusion with saffron and coffee (you have to leave it for 4 hours). I had never tasted an ice cream with saffron and of course this recipe will stay at home forever.

Ingredients of the ice cream: whole cow’s milk, skimmed milk powder, fresh cream (35% fat), egg yolk, sucrose, dextrose, thickeners, salt, vanilla pod, lemon peel, coffee beans, saffron sprinkles, praline and natural pine nuts.

The most challenging thing has been to photograph it at 41ºC on the porch despite having prepared everything before as I usually do. Besides that, it has given me to do in different places and now I can’t decide hahahaha there you have a few🤣.

Now I’ll edit better everything that I’m going to upload another …

This is absolute gelato royalty! 👑 The infusion of saffron and coffee is so unique and elegant… no wonder this recipe earned a permanent place in your home. That Isomalt sculpture is such a stunning touch, and the pine nuts layered throughout… divine! And huge respect for battling the heat to capture it. Honestly, it doesn’t just look delicious, it tells a whole story. Bravo! ✨

What a challenge you are setting for yourself, beautiful! This is big words. I just finished the Dondoli course and this ice cream made me dream. And you have elevated it with dsa isomalt structure. Bravo, Maloles, I can tell you’re enjoying the challenge 💞.

For a moment I thought that the isomalt sculpture was a glass dish in which you were presenting the ice cream. What a beautiful surprise I got when I read your post and discovered that it was isomalt! What a genius you are, Maloles!

This 2.0 version of Santa Fina’s Crema is simply spectacular. The sculpture that frames the ice cream has an elegant, almost sculptural movement that elevates the whole thing.
I love how the pine nuts, both natural and candied, add not only texture, but also a nod to the artisanal spirit of chef Sergio Dondoli’s course. And that touch of color in the isomalt… subtle and powerful at the same time!

Photographing at 41 °C and in different settings is a true act of culinary love… and the result deserves all the applause 👏
Thank you for continuing to create from the heart and share it with such generosity.❤

maloles dear! 💫 This “Santa Fina 2.0” is a true artistic manifesto in ice cream version: delicacy, technique and pure emotion.

The isomalt sculpture in shades of violet is hypnotic, has movement, personality… and makes the ice cream seem to float in a dance! The photos are a visual feast: natural light well used, depth of field that guides the eye and a harmonious color palette. Plus, that detail of the candied pine nuts adds texture and warmth. virtual applause! 😍
