I really like rice dishes. And lately I make them a lot with fish, seafood… I also make a lot of black rice. And yet this one, although I love it, I don’t know why, I hardly prepare it. It is a paella rice with vegetables and rabbit.
I start cooking it on the stove, and the last ten minutes I finish it in the oven.

Bea, what a wonderful rice you have made 😍. Making rice seems simple, but it’s really an art. Controlling the cooking times, the right amounts of liquid and ensuring that each ingredient maintains its texture and flavor in harmony is not easy, and you have solved it very well.
I love that you combine cooking on fire with the final touch in the oven, because that allows the rice to finish drying and concentrating flavors in a very even way. Also, visually it looks appetizing and well balanced.
do you usually vary the type of stock or broth according to the ingredients you use, or do you have a base stock that you adapt for each rice?
I’d love to know how you manage it. congratulations on that great dish! ❤️

Bea, qué maravilla de arroz te has marcado 😍.

hi Beatriz! 🍚 What a wonderful rice, full of color and with a combination of ingredients that jumps to the eye. That final touch in the oven gives it a super interesting texture, and the rabbit with artichokes looks luxurious! 🧡

This looks absolutely delicious…I don’t know why you don’t make it more often either, because it’s clearly a winner. Love the technique of finishing it in the oven, that must give it such a perfect texture!
