Pickled Nuts Progress _ First Month

Today, @beatriztorijagmail-com and I publish the progress of the pickled walnuts of the course ‘Introduction to pickles’ by Robert Ruiz Moreno that as you know we started last month and we decided to follow up on them to see how they behave being in different areas of Spain. Here you have the result one month after starting the process:

Location: Castellar (Jaén), Andalucía, Spain ( it is located in the northeast of the province of Jaén).

Ambient Temperature: Actual 38ºC ( average in the month 31ºC more or less )

      Ambient Humidity: 16%

The liquid level has dropped and as you can see it has darkened a little, not much. I have not opened it because I guess you can not … or maybe yes?

We will see how it evolves in the next month because it is so hot here that anything can be cooked without a pan 🤣.

I love this experiment, and carrying it out with you 😊. By the way, I just edited the post, that when I saw yours I realized that it didn’t say the place where I am 😅.

now that’s pickling under extreme conditions.

With that Castellar heat, your nuts are doing an accelerated master’s degree in fermentation 😅 The bottle looks impeccable: the clarity of the liquid, the perfect order of the nuts… and that checkered lid crowns it with charm!

You can tell that the dry environment has accelerated the concentration, hence that drop in the liquid. Even so, the color remains elegant and the whole, super photogenic. It’s nice to see this experiment shared with Beatriz and see how each environment leaves its mark!
will you be encouraged to try them before the second month? Or are you of the extreme patience team?. ✨

This is such a cool experiment! I love that you and Bea are tracking the walnuts from different climates! The color shift is subtle but so intriguing, and I totally feel the dilemma about opening the jar 😅 With that Jaén heat, I’m impressed the walnuts haven’t pickled themselves overnight! Can’t wait to see how they turn out next month.

@lanamihajlovic Yes, so far the changes are being different. Mine has already lost fluid. I’m looking forward to see how they evolve too ! And we won’t open the jar until 4 months ! 😅
