      Suckling pig at low temperature

Today we had a delicious suckling pig. In the vacuum bag I put aove, salt, pepper and a sprig of rosemary. Cooked in roner at 65ºC for 22 hours. Then I reduced the cooking juice with a knob of butter and a little cognac and with it I sprinkled the piece.

Finished in the oven at 200ºC until browned (about 20 minutes) along with some potatoes that I put a while before. It was melting in the mouth😋

The second photo, in the oven tray before serving.

What a delight, Maloles. A dish of 10. I really want to cook suckling pig, thanks for the time and temperature indications. 🥰🥰🥰

        maloles,that suckling pig looks spectacular!

You have achieved an even and appetizing browning on the surface, and the cut in the first image has a very neat presentation, with the browned potatoes as a base and the touch of rosemary adding visual freshness.

can you imagine trying this technique with other cuts or even applying an aromatic marinade beforehand? What would be the next dish you would like to master using low-temperature cooking?
Thanks for sharing, you’ll inspire more than one to fire up the roner! 🔥

Wow, that slow-cooked suckling pig sounds like a masterpiece! Cooking it low and slow for 22 hours must have made it incredibly tender, and that cognac butter sauce sounds divine. The golden finish in the oven is the perfect cherry on top… mouthwatering just looking at it!
