      A hearty dish

      Pork knuckle in brine.

First boiled and cured for 45 minutes, with cloves, onion, leek, a small tomato, bay

      tomato, bay leaf.

Then browned in the oven and the skin crunches like a toast, the accompaniment baked potato and roasted sausage

The cooking of the knuckle is very well done, with a crispy skin that jumps out at you and an appetizing browning 😍 The contrast with the juiciness inside is perfect. The hasselback potato adds texture and the chorizo adds color and flavor, but you could try cutting it at an angle or using an emulsion or fresh herb to visually enhance the presentation.
have you considered playing with sauces or pickles to add contrast in color and acidity? They could enhance the balance of the dish much more.
        Thanks for sharing.❤

This looks like the kind of meal that brings everyone to the table. Crispy skin, tender meat, and those sides… pure comfort on a plate!
