      Kataifi Nests with Vegetables

I think I shared some sweet kataifi pasta nests some time ago. Today I bring them with a vegetable stir-fry. Eggplant, zucchini, mushroom, spring onion, salt, pepper and a good olive oil.

I think it is a very creative and versatile idea to have transformed the classic kataifi pasta nests into a savory version with vegetables. The contrast between the crunchy texture of the kataifi and the juicy sautéed eggplant, zucchini and mushroom must be an explosion of flavors and sensations in the mouth. I have a doubt… since the vegetables are sautéed, do they quickly moisten the inside and lose the crunchiness of the nest? Maybe if you prepare them again you could add a touch of green, such as some small basil leaves, lemon thyme or even some tender shoots. They would add visual contrast and an interesting aromatic nuance.

have you also tried filling them with a touch of cheese (such as feta or ricotta) to give them a creamy touch? I think it could complement very well that vegetable base so well achieved.

Thanks for sharing this very inspiring version,🌿✨.

@sussan_scoolinaryteam Thanks Sussan! No, the veggies don’t moisten quickly because I put them in just before bringing to the table. And yes, you are absolutely right about the green touch, but this photo is from a while ago and then I didn’t put anything else on it. As soon as I have kataifi again I will do as you say and I will also put that touch of cheese that I thought was great.

Thanks again for your advice. Annotated and pending is the subject ❤

What a delicious twist on kataifi nests! The veggies sound fresh and flavorful. Such a perfect balance with that crispy kataifi. Yum!
