Mercedes, what an original proposal! I love that you have experimented with spirulina, in addition to rosemary and salt flakes. I can tell that you are encouraged to give your personal touch to recipes, and that always adds a lot of value in the kitchen. The crumb looks fluffy and with a nice fermentation.

If you like, I’ll share a little tip to give it a more classic focaccia format, since in the photos it looks closer to a country bread because of the height.

If you want, you could divide the whole recipe (which as you can see in the recipe booklet yields 4 units). Dividing the dough into 4 portions will give you 4 balls of approximately 445 grams and you can use these mold measures according to the result you want in your Focaccia:

▪️25 cm in diameter if you prefer a focaccia with thicker dough.

▪️28 cm for a regular thickness.

▪️30 to 32 cm for a thin focaccia with crispy edges.

would you like to try it in either of those formats next time or did you like this bread-like style better? I’d love to hear how your experience with spirulina was in terms of taste and texture – thanks for sharing your result! ❤️

Wow, this focaccia looks absolutely stunning! The addition of spirulina gives it such a vibrant color, and rosemary with salt flakes is a classic flavor combo that never disappoints.
